Established in Ehime-prefecture, 1872.
Umenishiki is the typically excellent sake of Ehime, the instigator of the hand-crafted sake boom. The brewery is in the Kawanoe town (existing Shikoku Chuo-city), blessed with rich water and famous for Japanese rice paper, surrounded by the inland sea spreading out calmly, and the highest peaks of the Shikoku mountain range. Around 1965-1975, excellent chief brewer Takaji Ase’s long year efforts bloom. Umenishiki won the gold medal 12 concecutive years in the Annual national Sake competition in Japan, and became famous nationwide. The chief brewer Fukuhei Yamane, who inherited the brewing technique from Tokaji Ase, was authorized by “A modern master craftsperson”, and won many prizes as a leading brewer. The stable quality of the sake built Umenishiki’s widely recognized reputation today. Umenishiki sake, which is mild and smooth with an excellent fruity aroma, proved that genuine sakes will become reasonably well-recognized.
