Ernest Cazals, a cooper from the south of France, moved to Champagne where he met his wife. In 1897, they founded the Cazals house in Le Mesnil-sur-Oger. Since then, three generations of wine-growers - including Claude Cazals, inventor of the gyropalette - have followed each other at the head of the winery. The estate is now run by Delphine Cazals. The 9 ha of vineyards, all planted with Chardonnay, are located in 4 villages from the Côte des Blancs, south of Epernay: Le Mesnil-Sur-Oger, Oger, Vertus and Villeneuve. Clos Cazals in Oger (3.70ha) and a few plots in Le Mesnil-Sur-Oger are ranked Grand Cru. The others are ranked Premier Cru. The house Blanc de Blancs Champagnes have delicacy, aromatic power and the capacity for long aging.

Farming practices: sustainable, with the goal to be certified HVE (High Environmental Value) in the next few years.

Blanc de Blancs Grand Cru - Carte d'Or
100% hand-harvested Chardonnay from 40 year old vines planted on chalky soil. The vineyards are located in Oger and Le Mesnil-sur-Oger. The fermentation takes place in thermo-regulated stainless steel vats, including the malolactic fermentation. Dosage: 8g/liter. Aged for 3 years before release.

Blanc de Blancs Grand Cru Extra Brut - Cuvée Vive
100% hand-harvested Chardonnay from 40 year old vines planted on chalky soil. The vineyards are located in Oger and Le Mesnil-sur-Oger. The fermentation takes place in thermo-regulated stainless steel vats, including the malolactic fermentation. Dosage: 3g/liter. Aged for 6 years before release.

Blanc de Blancs Grand Cru 2009
100% hand-harvested Chardonnay from 40 year old vines planted on chalky soil. The vineyards are located in Oger. This cuvée is made from the ripest plots. The fermentation takes place in thermo-regulated stainless steel vats, including the malolactic fermentation. Dosage: 7g/liter. Aged for 6 years before release.

Blanc de Blancs Grand Cru 2009 - La Chapelle du Clos
100% hand-harvested Chardonnay from 50 year old vines planted on chalky soil. Covering 3.7 ha and located in Oger, the Clos (there are only 21 of them in Champagne) was bought by the Cazals family in the 1940's, from famous politician and Nobel Peace Prize winner Léon Bourgeois. The first vines were planted in the fifties.
The fermentation takes place in thermo-regulated stainless steel vats and 10% oak barrels, including the malolactic fermentation. Dosage: 6g/liter. Aged for 8 years before release.
